Ingredients

  • 2 tablespoons coconut oil
  • 1 onion, diced
  • 1 tablespoon grated ginger
  • 2 cups peeled and diced carrots
  • 1 tablespoon curry powder
  • 1/2 teaspoon sea salt
  • 4 cups chicken or vegetable stock
  • 1 cup coconut milk
  • Juice of 1 lime
  • 1/4 cup shredded or flaked coconut

Instructions

  1. Heat the coconut oil over medium high heat in a large saucepan. Add the onion and ginger and cook until soft. Add the carrots, curry powder, and salt. Stir and cook for about a minute.
  2. Add the stock and bring to a boil. Reduce heat and simmer for 15-20 minutes, until carrots are very tender. Transfer the soup to a blender and puree until very smooth and add back to the pot Stir in the coconut milk and lime juice and simmer on low until heated through.
