egg substitute or 8 egg whites
5 tsp. olive oil
3/4 c. chopped green bell pepper
3/4 c. chopped red bell pepper
1/2 c. oil-packed sun-dried tomatoes, drained and chopped
1/4 c. reduced-fat shredded mozzarella cheese
whole wheat crackers, with 7 calories and 2 grams fiber per cracker, such as wasa
  1. In a bowl, whisk the egg substitute or egg whites and the eggs.
  2. Heat the oil in a skillet over medium-low heat. Cook the eggs without stirring, for 4 to 6 minutes, until set on the bottom. Top with the peppers, tomatoes, and cheese and continue cooking until the eggs are completely set.
  3. Fold the cooked eggs in half with a spatula and serve with crackers.
